Recommendations for cleaning the Sardines:
First, cut the head and tail off. Then open the sardine in half and with a knife or scissors to gut it along the belly.
Separate the two loins. Remove the central spine with a knife or your fingers. Pressing very carefully, separate the skin and the scales from the loins and remove any remaining fishbone. Finally, rinse the loins. They’ll then be ready to eat or add to your favourite recipe.
