Dry tuna extra quality - Usisa
Our ‘Mojama’ ( dry tuna ) of Extra quality belongs to the PGI “Mojama de Isla Cristina”, and is obtained from the most noble part of the tuna, the loin, which after undergoing a salting and drying process and a careful selection, gives rise to this product, characterized by an external dark brown appearance, presenting to the cut the veins of the tuna loin of this area.

Of the 3 recognized qualities of the Mojama, is the “Extra” the best considered, since it comes from a more compact muscle area, which results in a greater softness in its texture, having a less marked veining than in those of first quality or sirloin steak.

Our ‘Mojama’ of Isla Cristina, belongs to the Regulatory Council of the Protected Geographical Identification “Mojama de Isla Cristina”, which endorses and controls the production to give guarantee of careful elaboration and care from carefully selected tuna.
