Traditionally made in Reinosa-Cantabria. Its meat has a soft texture and an intense flavour, characteristically Cantabrian. Unmatched by anchovies caught in other areas. It can be eaten by itself, on toast, or accompanied by tomato and a few drops of olive oil.
