Small Mackerel from the coast must be made following the same traditional procedures:
- Reception of the fish.
- Head removal, gutting and washing.
- Manual packaging.
- Steam cooking.
- Addition of olive oil.
- Tinning.
- Autoclave treatment.
- Can washing.
- Storage and dispatch.
